Ingredients
SHRIMP:
1 pound jumbo shrimp, peeled and deveined
1/2 c. dry white wine
4 tbsp (1/2 stick) unsalted butter, melted and divided
Juice from one lemon
3 garlic cloves, minced
1/2 tsp salt
1/4 tsp black pepper
TOPPING:
3/4 c. panko breadcrumbs
1/4 c. Parmesan cheese, finely grated
1/2 tsp salt
2 tbsp butter, melted
Fresh parsley, finely chopped
How to make Magic Crispy Baked Shrimp
Step 1: Prepare the oven. Preheat it to 425 degrees F.
Step 2: Into a 9 x 13-inch baking pan, pour the wine and 2 tbsp melted butter. Heat in the oven for about 10 minutes to reduce the sauce.
Step 3: To a bowl, add the rest of the butter, garlic, lemon juice, salt, and pepper. Add this to the shrimp and toss to coat.
Step 4: Place the breadcrumbs, Parmesan cheese, salt, and 2 tbsp melted butter in a different bowl. Stir well until combined.
Step 5: Take the dish out of the oven, spread the shrimp out in one layer, snuggling to fit them together. Then, sprinkle on top the breadcrumb topping. Place in the preheated oven and bake for about 12 minutes until opaque but still pink.
Step 6: To encourage browning, broil the shrimp for about 2 minutes on high. When done, remove from the oven and garnish with fresh parsley before serving. Enjoy!
