I found the perfect low-carb side dish! This Mushroom and Spinach Cauliflower Rice is my current obsession. I can throw this together any time and fast without the fuss. It is made with just simple ingredients that I already have in my pantry. It is a pretty simple side dish that goes so well with just about anything! But if you are keeping everything on the low carb section, I suggest serving this with chicken, fish, or a side salad.
I am keeping a very strict diet for about a month now. With everything that is happening, I want to take care of my health more. Before I used to just eat anything without thinking of the numbers or how it will affect me overall. 1 tablespoon olive oil
2 minutes garlic cloves
1 tablespoon soy sauce
1/2 c. chopped onion
3 c. sliced mushrooms
soy sauce
10 ounces frozen riced cauliflower
2 c. spinach
How to make Low Carb Mushroom & Spinach Cauliflower Rice
Step 1: Following the package direction, cook the cauliflower rice.
Step 2: In a skillet, heat the olive oil. Once the oil is hot, add the onions to the skillet and cook until soft. Then, add the mushrooms and continue to cook until done. Next, add the garlic and stir.
Step 3: To the skillet, add the cauliflower rice, then soy sauce. Stir until the soy sauce has been absorbed by the cauliflower rice.
Step 4: Stir in the spinach and cook further until wilted.
