It is made with only a few simple ingredients and ready in under thirty minutes. Not to mention, this is super healthy, low-carb, and goes so well with just about anything. Or, if you are keeping it light and nutritious, simply serve this with a simple side salad or steamed/roasted veggies. This straightforward recipe is not at all complicated. 1.5-pound chicken tenders (whole) or chicken breasts (cut in quarters)
5 ounces plain Greek yoghurt (I used 5% fat yoghurt)
½ c. grated Parmesan cheese
1 tsp garlic powder
2 tbsp mayonnaise
Parsley (chopped, for garnish)
oil spray
¼ tsp salt
¼ tsp black pepper
How to make Low Carb Greek Yoghurt Chicken
Step 1: Prepare the oven. Preheat it to 375 degrees F. Using a nonstick oil spray, lightly grease a 12-inch oven-proof pan or 9 x 9-inch baking dish. Set aside.
Step 2: Place the Greek yoghurt, mayonnaise, Parmesan cheese, garlic powder, salt, and pepper in a medium bowl. Mix well until blended.
Step 3: Into the bowl with the yoghurt mixture, add the chicken and toss to coat.
Step 4: To the prepared baking dish, transfer the chicken. Note that the chicken should only be lightly coated with the yoghurt mixture.
Step 5: Place in the preheated oven and bake for about 25 to 30 minutes or until the chicken is fully cooked.
Step 6: Set the oven to “broil” and position the pan under the broiler for about 2 to 3 minutes or until the top of the chicken is lightly brown.
Step 7: Serve the chicken right away garnished with some chopped parsley. Enjoy!
