This is a wonderful low-carb dish with eggplant as its base rather than the carb-heavy breaded crust. Easy to assemble with a few simple ingredients that give a ton of flavour to this Eggplant Pizza. If you are a vegetarian, I am sure you’ll quickly love this. Even if you are not a vegan, this scrumptious dish will surely melt your heart!
INGREDIENTS
1 large eggplant
1 tbsp olive oil
1/2-1 c. no sugar added pizza sauce
2 garlic cloves minced
1/2 yellow onion sliced
1 c. fresh baby spinach
sea salt to taste
ground pepper to taste
3/4 c. shredded mozzarella cheese
¼ c. chopped fresh oregano
crushed red pepper optional
How to make Low Carb Eggplant Pizza
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Slice in lengthwise the eggplant to around 1/4 to 1/3-inches thick. On each side of the eggplant slices, brush or rub a bit of olive oil. On a baking sheet lined with parchment paper or a baking stone, place the eggplant slices and bake in the preheated oven for about 7 to 10 minutes until hot and beginning to cook down.
Step 3: In the meantime, heat half tbsp olive oil in a skillet. Once hot, add the garlic and onion and saute for about 3 to 4 minutes until tender. To taste, season with salt and pepper. Then, add in the pizza sauce and spinach and continue to cook for a minute or two more until the mixture is warm and the spinach has wilted.
Step 4: Remove the dish from the oven when done and top each slice of eggplant with the onion and spinach mixture, then sprinkle with cheese and chopped oregano. Bake for another 5 minutes until the cheese has melted.
Step 5: Garnish with more fresh oregano and crushed red pepper before serving. Enjoy immediately!
NOTES:
You can use your pizza sauce or a store-bought.
Add 8 ounces of ground chicken sausage or veggie sausage to the skillet along with the garlic and onion if you want more protein. Saute until thoroughly cooked before adding in the pizza sauce and spinach.
