Thanksgiving is over, but we cannot get over this Loaded Sweet Potato Casserole! This is by far the best casserole we’ve had! I am sure to whip this up again and again.
Ingredients
Sweet Potatoes:
2 Eggs
3 pounds fresh sweet potatoes (4–5 large sweet potatoes), peeled and cut into 1” cubes
1/2 c. (120ml) milk
1/4 c. (56 grams) unsalted butter, melted
1 c. (225 grams) packed light brown sugar
1 teaspoon ground cinnamon
Pinch of salt
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
Topping:
3 tablespoons (42 grams) salted butter, melted
1/3 c. (75 gram) light brown sugar, packed
1/8 teaspoon tsp ground nutmeg
1/3 c. (44 grams) all-purpose flour
Pinch of ground cloves
2–3 c. marshmallows
1/2 teaspoon ground cinnamon
How to make Loaded Sweet Potato Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees F or 176 degrees C.
Step 2: In a large pot, place the sweet potatoes. Fill the pot with water. Bring to a boil and cook the potatoes for about 8 minutes or until fork-tender.
Step 3: When done, drain the potatoes and place them back in the pot. Mash the potatoes to your preferred smoothness. Then, add the milk, brown sugar, butter, eggs, cinnamon, nutmeg, vanilla, and salt. Mix well until combined.
Step 4: Into a 9 x 13-inch casserole dish, pour the potatoes. Tent the casserole and keep it in the fridge for up to 2 days. You can bake the casserole immediately for about 25 to 30 minutes.
Step 5: In the meantime, make the streusel topping by whisking the flour, brown sugar, cinnamon, nutmeg, and cloves until blended. Now, add the melted butter and mix well until combined.
Step 6: Take the casserole from the oven when done and place the marshmallows and streusel on top. Return to the oven and bake for an additional 10 to 15 minutes until the marshmallows are slightly brown. Set the oven to broil (400 degrees) until the mallows have browned to your liking.
Step 7: Enjoy the casserole warm!
