Loaded Roasted Cauliflower

Prep time: 10 mins | Cook time: 35 mins | Total time: 45 mins | Yield: 4-6 Side Dish Serving

This super addicting side dish is one of my favourite go-to. With tangy ranch, crisp bacon, fresh green onions, and sharp cheddar cheese, this deliciously tender, caramelized roasted cauliflower surely will become your favourite, too!

Ingredients

6 slices bacon, chopped

2 heads of cauliflower, leaves removed, broken/cut into small florets

1 tsp garlic powder

1/4 tsp fresh cracked black pepper

1/3 c. shredded sharp cheddar cheese

4 green onions, sliced thinly

1/3 c. ranch dressing

Additional salt, to taste

How to make Loaded Roasted Cauliflower

Step 1: Cook the bacon in a medium skillet over medium-high heat until crisp. To a paper towel-lined plate, transfer the bacon to cool and set aside. Make sure to reserve 1/4 cup bacon grease.

Step 2: Prepare the oven. Preheat it to 425 degrees F.

Step 3: With parchment paper, line a baking sheet and set it aside.

Step 4: Combine the cauliflower, bacon grease, garlic powder, and black pepper in a large bowl.

Step 5: On the prepared baking sheet, spread the cauliflower. Place inside the preheated oven and bake for about 18 to 22 minutes until tender and golden brown, flipping once halfway through cooking.

Step 6: On top of the cauliflower, sprinkle the cheddar cheese and bake for another 2 to 3 minutes until the cheese has melted.

Step 7: Sprinkle the crumbled bacon and green onions on top of the cauliflower and drizzle with ranch dressing. Serve and enjoy immediately.

Notes:

Add avocado oil or grapeseed oil if the bacon isn’t fatty enough to produce grease.

For this recipe, use either homemade or store-bought ranch dressing.
