I always look for more in a dish. I love mashed potatoes but would also like to add some flair to it. And with this easy recipe, I do not have to look further! Scrumptious Loaded Mashed Potato Baked with melty cheese and bacon bits. Made with only a few simple ingredients and ready in less than an hour, this amazing dish will surely blow you away! This loaded potato baked in a casserole form is a must on Thanksgiving and incredibly easy to whip up and enjoy all year round.
INGREDIENTS
4 pounds russet potatoes, peeled and quartered
8 slices bacon, cut into 1-inch pieces
3/4 cup sour cream
1/3 cup butter
2 tablespoons heavy cream
2 cloves garlic, minced
kosher salt
Freshly ground black pepper
1 3/4 cups shredded cheddar, divided
Chopped chives, for garnish
How to make Loaded Mashed Potato Bake
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Add the potatoes to a large pot and cover with 2-inches of water. Boil the potatoes for about 15 to 20 minutes until fork tender. Drain when done and place the potatoes back in the pot.
Step 3: In the meantime, cook the bacon in a large oven-safe skillet for about 6 minutes over medium heat until crispy. Transfer the cooked bacon to a paper towel-lined plate to drain.
Step 4: Now, mash the potatoes. Then, to the mashed potatoes add 1 ¼ cups cheddar, most of the cooked bacon, sour cream, butter, heavy cream, and garlic. To taste, generously season with salt and pepper.
Step 5: To an oven-safe skillet or 9 x 13-inch baking dish, transfer the potato mixture and top with the rest of the cheddar and cooked bacon. Place in the preheated oven and bake for about 15 minutes until the cheddar is melty.
Step 6: Remove from the oven when done and serve garnished with chives. Enjoy!
