Loaded Cowboy Cookies Recipe

Prep time: 20 mins | Cook time: 17 mins | Total time: 37 mins | Yield: 36 LARGE COOKIES

Every bite of this Loaded Cowboy Cookies is a delight. Made with oats, coconut, pecans, and chocolate chips, these tasty cookies are no doubt out of this world!

Ingredients

3 c. flour

1 tbsp baking powder

1 tbsp baking soda

1/2 tsp salt

1 1/2 c. (3 sticks) butter, at room temperature

1 1/2 c. sugar

1 1/2 c. brown sugar

3 Eggs

1 tbsp vanilla

3 c. semisweet chocolate chips

3 c. old fashioned oatmeal

2 c. angel flake coconut

1 1/2 c. chopped pecans

How to make Loaded Cowboy Cookies

Step 1: Prepare the oven. Preheat it to 350 degrees.

Step 2: With parchment paper, line the baking sheets.

Step 3: In a bowl, whisk the flour, baking powder, baking soda, and salt.

Step 4: Place the butter in a very large bowl and beat until smooth and creamy. Slowly beat in the sugars until completely combined.

Step 5: Add in the eggs a piece at a time, beating every after each addition. Then, stir in the vanilla.

Step 6: Mix in the flour mixture until just combined. Fold in the chocolate chips, oats, coconut, and pecans.

Step 7: Scoop out about 1/4 cup of cookie dough into each cookie. Roll the cookies into balls and place them on the prepared baking sheet leaving 3-inches of space between.

Step 8: Place in the preheated oven and bake for about 15 to 17 minutes until the edges are a bit brown.

Step 9: Remove the cookies from the oven and onto a wire rack to cool.

Notes:

Adjust the recipe to one-third to make a smaller batch of cookies.

For smaller cookies, scoop out rounded tablespoons of dough. Bake for about 10 to 12 minutes until lightly brown.

Using a spatula, tap the edges of the cookies while still hot if the cookies came out not perfectly round.
