Loaded Baked Potato Chicken Casserole

This Loaded Baked Potato Chicken Casserole is a filling, delicious, and easy casserole recipe loaded with chicken and potatoes topped with a mixture of melty cheese, bacon, and green onions. This is another casserole recipe that you must have in your regular menu rotation.

If you are searching for another easy and quick dinner idea, you have to give this casserole a try soon. It is delicious with the right amount of heat. This Loaded Baked Potato Chicken Casserole is also awesome for feeding the crowd!

Ingredients

1/3 c. olive oil

2 pounds of chicken breast

2 tablespoons Garlic Powder

8 potatoes

1 tablespoon Paprika

6 tablespoons of Hot Sauce

1 1/2 teaspoon salt

1 tablespoon fresh Ground Pepper

Toppings:

1 c. crumbled Bacon

1 c. diced Green Onion

2 c. Shredded Cheese

How to make Loaded Baked Potato Chicken Casserole

Step 1: Prepare the oven. Preheat it to 500 degrees F.

Step 2: Place the salt, pepper, olive oil, hot sauce, and garlic in a big bowl. Mix well until blended.

Step 3: Into small cubes, slice the potatoes and place all the pieces into the bowl.

Step 4: Grease a baking dish with cooking spray.

Step 5: Transfer the potatoes into the prepared baking dish and pour the remaining sauce from the bowl into the potatoes. Place in the preheated oven and bake for about 45 minutes, stirring the potatoes every 15 minutes.

Step 6: In the meantime, slice the chicken into cubes and add the pieces to the bowl with the leftover sauce.

Step 7: In a different bowl, add the topping ingredients (bacon, cheese, and green onions). Then, top the chicken with the topping mixture.

Step 8: When the potatoes are done, take them out of the oven and adjust the oven temperature to 400 degrees F. Place the chicken in the oven and bake for about 15 minutes or until the chicken is done and the topping is melted and bubbly.
