by Rebecca December 11, 2020

Preparation time: 10mins | Cooking time: 35mins | Servings: 9

The perfect dessert for any occasion, these brownies have the right balance of bright, tart, and fresh lemon flavour that you’ll crave over and over again. My go-to treat especially during spring or summer because of its refreshing taste. Made with only a few simple ingredients, follow these easy steps to make these lovely sweet.

INGREDIENTS

BROWNIES:

1/2 c unsalted butter, softened

3/4 c flour

2 Eggs, large

2 tbsp lemon zest

2 tbsp lemon juice

3/4 c granulated sugar

1/4 tsp sea salt

GLAZE:

4 tbsp lemon juice

8 tsp lemon zest

1 c icing sugar

How to make Lemony Lemon Brownies

Step 1: Prepare the oven. Preheat it to 350 degrees F.

To make the Brownies:

Step 1: Use butter to grease an 8 x 8-inch baking dish. Set aside.

Step 2: In a small bowl, zest and juice two lemons. Set aside.

Step 3: Add the flour, sugar, salt, and softened butter in a bowl of an electric mixer fitted with a paddle attachment. Beat until combined.

Step 4: Whisk the eggs, lemon zest, and lemon in a different bowl until just combined. Add this into the flour mixture and beat at medium speed for about 2 minutes until smooth and creamy.

Step 5: Pour the mixture into the baking dish and place inside the preheated oven.

Step 6: Bake for about 23 to 25 minutes or until the edges are golden brown.

Step 7: Once done, remove from the oven and let the brownie cool completely. Make sure to not over-bake the bars or they will turn out dry.

To make the Glaze:

Step 1: In a bowl, sift the powdered sugar. Whisk with lemon zest and juice.

Step 2: Use a rubber spatula to spread the glaze over the cooled brownies. Cut into bars and serve. Enjoy!
