1 (16 oz) package small curd cottage cheese
1 c. white sugar
3 tbsp all-purpose flour
1 tsp fresh lemon juice
1 pinch salt
3 Egg yolks
3 Egg whites
1 (12 fluid oz) can evaporate milk
1 ½ c. milk
2 (9”) pie shell
How to make Lemony Amish Custard Cottage Cheese Pie
Step 1: In a strainer, place the cottage cheese. Drain for an hour until most of the liquid has been drained.
Step 2: Prepare the oven. Preheat it to 425 degrees F or 220 degrees C.
Step 3: Combine the cottage cheese, sugar, flour, lemon juice, salt, egg yolks, evaporated milk, and regular milk in a large bowl.
Step 4: Beat the egg whites in a separate bowl until firm and fold in the butter until smooth. Pour this into the pie crust.
Step 5: Place inside the preheated oven and bake for about 15 minutes. Adjust the oven temperature to 350 degrees F or 175 degrees C and bake for another 25 minutes or until a knife inserted in the middle of the pie comes out clean.
Step 6: Remove from the oven and onto a wire rack to cool. Place in the fridge to set. Enjoy the next day.
