Lemon herb chicken breasts

Chicken marinated in an easy lemon herb marinade and cooked until juicy. This dish is the perfect protein dinner that’s ready in under thirty minutes! Quick, easy, and delicious Lemon Herb Chicken Breasts. A must!

Ingredients

4 large chicken breasts (skinless + boneless)

Lemon herb marinade:

¼ c. olive oil

¼ c. lemon juice

zest of 1 lemon

3 garlic cloves crushed

1 teaspoon oregano

2 teaspoons dried mixed herbs

2 teaspoons fresh thyme leaves

½ teaspoon paprika

½ teaspoon chilli/red pepper flakes

2 teaspoons salt

How to make Lemon herb chicken breasts

Step 1: Between two layers of parchment or baking paper, place the chicken breasts. Using a meat mallet or rolling pin, slightly flatten out the chicken breasts.

Step 2: In a bowl, whisk the marinade ingredients (olive oil, lemon juice, zest, garlic, oregano, dried mixed herbs, fresh thyme leaves, paprika, chilli or pepper flakes, and salt).

Step 3: In a glass container, place the chicken and pour the marinade over. Mix until the chicken breasts are completely coated. Cover and place in the fridge to marinate the chicken for at least 20 minutes or up to 24 hours.

Step 4: Once the chicken breasts are ready, remove them from the fridge.

Step 5: Heat a skillet, pan, or grill. Once hot, add the chicken and cook for about 3 to 5 minutes on each side until cooked through but still juicy. The cooking time varies depending on the thickness of the chicken.

Step 6: Once cooked, remove from the heat and cover the chicken with foil to rest for at least 5 to 10 minutes.

Step 7: Serve and enjoy!
