Lemon Garlic Shrimp Scampi Recipe

This shrimp scampi is one of my favourite shrimp recipes and has been my go-to for as long as I can remember! It’s incredibly easy to throw together using just simple ingredients. A quick meal that’s ready in under fifteen minutes, making this perfect for the busiest days. If you are looking for a simple, fast, and healthy dish, this Lemon Garlic Shrimp Scampi is a must-try! Pair this with your preferred side vegetables such as broccoli or green beans for a simple weeknight dinner.

This dish has the perfect combination of lemon and garlic plus Parmesan. If you want a simple yet incredibly delicious meal for the hectic days, this recipe is another great addition to your meal rotation.

Ingredients

1 pound shrimp (not frozen, needs to be thawed)

2 tbsp butter (or coconut oil)

1 lemon (freshly squeezed)

1 tbsp garlic salt

2 tbsp fresh parsley

1/2 c. chicken broth (or you can use water)

8 ounces angel hair pasta

freshly grated Parmesan cheese

salt and pepper to taste

How to make Lemon Garlic Shrimp Scampi

Step 1: Following the package directions, cook the angel hair (or spaghetti) pasta in a large pot of boiling water.

Step 2: In a large skillet, melt the butter over medium-high heat. Once the butter has melted, add the shrimp to the skillet and season with salt, pepper, and garlic salt. Cook the shrimp for about 2 to 4 minutes, stirring often until pink.

Step 3: To the shrimp in the skillet, stir in the lemon juice and chicken broth (or water). Bring the liquid to a simmer, then whisk in the fresh parley followed by the Parmesan cheese.

Step 4: Add the angel hair pasta to the skillet. Toss to coat, then garnish with extra Parmesan and parsley. Serve right away. Enjoy!

Tip:

This lemon garlic shrimp scampi is perfect to serve with broccoli or green beans on the side.
