INGREDIENTS
1 Egg
1 box lemon cake mix
½ – 1 c. powdered sugar
(1) 8 ounces tub of Cool Whip
How to make Lemon Cool Whip Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, grease a cookie sheet.
Step 2: Place the cake mix, cool whip, and egg in a large bowl. Mix well until just combined and very fluffy.
Step 3: Into the powdered sugar, drop rounded cookie dough. You can use a small cookie scoop or two spoons to do this. Then, roll the dough ball until fully coated. Place the cookies about 2 inches apart on the prepared cookie sheet.
Step 4: Place in the preheated oven and bake for about 8 minutes or until the edges of the cookies are very lightly golden. Remove from the oven when done and allow the cookies to cool for a few minutes on the cookie sheet. Transfer the cookies to wire racks to cool fully.
Step 5: Place the cookies in an airtight container and store them for up to 2 days.
NOTE:
For this recipe, you can swap the boxed lemon cake mix with your favourite boxed cake mix.
