lazy oatmeal cake

Prep Time: 30 mins | Cook Time: 30 mins | Total Time: 1 hr | Yield: 12 Servings

This cake is to die for! I’m telling you; you need this in your life right now!

Ingredients:

CAKE

1 1/4 cups water, boiling

1 cup oatmeal, old-fashioned, uncooked

1/2 cup butter

1 cup of sugar

1 cup brown sugar, firmly packed

2 Eggs

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1 teaspoon baking soda

3/4 teaspoon cinnamon

1/2 teaspoon salt

1/4 teaspoon nutmeg

TOPPING

1/2 cup butter

2 cups coconut

1 cup nuts (finely chopped)

1 1/2 cups brown sugar, firmly packed

8-10 Tablespoons evaporated milk

Directions:

Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Step 2: In a medium mixing bowl, add the oatmeal and pour in boiling water. Allow it to sit for about 20 minutes.

Step 3: In a small mixing bowl, add the sugars, butter, and eggs. Beat until well mixed.

Step 4: Add the soaked oatmeal and vanilla.

Step 5: Add in the baking soda, cinnamon, nutmeg, flour, and salt. Stir until well mixed.

Step 6: Apply cooking spray in a 9×13-inch baking pan.

Step 7: Transfer the mixture into the prepared pan.

Step 8: Place the pan inside the preheated oven and bake for about 30 minutes or until a toothpick comes out clean after inserting it in the middle.

To Make the Topping:

Step 1: Place the butter in a microwavable bowl and put it inside the microwave. Heat for 1 to 2 minutes or until melted.

Step 2: Remove from the microwave and add in the nuts, coconut, milk, and brown sugar. Stir until well mixed.

Step 3: Spread the frosting over the cake.

Step 4: Place it inside the oven and broil for a few minutes or until brown.

Step 5: Serve and enjoy!
