This easy Layered Taco Salad Dip is made with refried soybeans or additional beef if planning to omit the bean layer. With three-layer of goodness; Refried Soybeans, Taco Ground Beef, and Taco Dip Toppings, this dip surely will not fall short.

Refried Soy Beans (Optional):
15 oz. black soybeans See Note
1 tbsp olive oil extra virgin
½ tsp salt
1 ½ tsp minced garlic
1 ½ tsp chilli powder
1 tbsp unsweetened almond milk or coconut milk
Taco Seasoned Ground Beef:
1 ½ lbs ground beef See Note
1 small onion diced
3 cloves garlic minced
1 tbsp chilli powder
1 tsp cumin
½ tsp garlic powder
½ tsp onion powder
¼ tsp crushed red pepper flakes
½ tsp paprika
1 ½ tsp sea salt
1 tsp black pepper
Additional Toppings:
4 oz. sour cream
4 oz. cream cheese softened
8 oz. guacamole
2 medium tomatoes diced
8 oz. cheddar cheese shredded
3.8 oz. can sliced black olives optional
How to make Layered Taco Salad Dip with Ground Beef
Refried Soy Beans (if using):
Step 1: Drain and rinse a can of soybeans.
Step 2: In a blender or food processor, place the beans and pulse until smooth. Add in the rest of the ingredients and blend.
Step 3: In a medium skillet, heat olive oil. Once hot, add the bean mixture and cook until soft.
Taco Seasoned Ground Beef:
Step 1: Brown the ground beef in a large skillet with onion and garlic.
Step 2: Drain the excess fat and stir in the rest of the seasonings.
Layers:
Step 1: Combine the sour cream and cream cheese in a small bowl and set aside.
Step 2: Layer the following in this order in a 13 x 9-inch baking pan: refried soybeans, taco seasoned ground beef, sour cream mixture, guacamole, tomatoes, and shredded cheese.
Step 3: If desired, top with sliced black olives.
Step 4: Enjoy over some lettuce for a salad or as a dip for low-carb tortilla chips.
Notes:
You can use another half to one pound of ground beef with additional seasonings if you are planning to omit the bean layer.
In place of the mixed spice blend, use a low-carb taco seasoning for the seasoned ground beef.
Sprinkle in some lemon or lime to prevent the avocado layer from browning just before spreading it on.
Place the leftovers in an airtight container and the fridge for up to 3 days.
