Lasagna Roll Ups

Prep Time: 30 mins | Cook Time: 42 mins | Total Time: 1 hr 12 mins | Servings: 12 lasagna roll-ups

Enjoy classic lasagna any time with this super easy lasagna roll-ups recipe. These are easier to make and bake, no resting is needed! If you want to make this ahead, you can. Also, these lasagna roll-ups are freezer-friendly and reheat perfectly!

Ingredients

16 ounces ground beef, 85% lean

12 lasagna noodles, cooked to package instructions

1/2 c. diced onion

3 garlic cloves, minced

24 ounces marinara sauce

1 teaspoon sea salt, or to taste for red sauce

1/2 teaspoon dried oregano

1 large egg

3 c. mozzarella cheese, shredded, divided

1/4 c. Parmesan cheese, shredded

15 ounces ricotta cheese

1/4 c. parsley, chopped, plus more to garnish

1/2 teaspoon black pepper, or to taste

How to make Lasagna Roll-Ups

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: Following the package directions, cook the noodles in a large pot of salted boiling water until al dente. When done, drain and fill the pot with cold water.

Step 3: Cook the ground beef in a deep pan or dutch oven over medium-high heat for about 2 minutes, breaking the meat into pieces using a spatula. Add the onion and continue to cook for additional 3 minutes until soft. Then, add the garlic along with a tsp salt, half tsp pepper. And half tsp oregano. Stir and cook for a minute more. Pour in the marinara and bring the mixture to a simmer. Turn the heat off.

Step 4: On the bottom of a casserole dish, spread a half cup of the meat sauce.

Step 5: Combine the ricotta, 1 egg, 1/4 cup Parmesan cheese, 1 1/2 cups mozzarella cheese, and 1/4 cup parsley in a large bowl until well combined.

Step 6: In a single layer, arrange the noodles on a large baking sheet. Over the noodles, spread 1/4 cup or 1 scant ice cream scoop of the cheese mixture. In a strip down the middle of each noodle, add a heaping tablespoon of the meat sauce. Now, start rolling the noodles, then arrange them in the prepared casserole dish.

Step 7: On top of the roll-ups, spread the rest of the meat sauce, then sprinkle with the remaining mozzarella cheese. Tent the casserole dish with foil. Ensure the foil is not touching the cheese.

Step 8: Place the casserole dish in the preheated oven and bake the roll-ups for about 40 minutes. Uncover and broil the roll-ups for about 2 to 3 minutes or until the cheese is lightly golden. Remove from the oven when done, and serve the lasagna roll-ups garnished with parsley. Enjoy!
