I quickly fell in love with the wonderfully flavorful crust of these Lamb Chops with Garlic & Herbs. Marinated in a simple mixture of garlic, rosemary, thyme, and olive oil and pan-seared to perfection – these juicy and tender lamb chops make a stunning quick meal for everybody.

2 lbs lamb chops, cut ¾-inch thick, 4 pieces
kosher salt, for seasoning
black pepper, for seasoning
1 tbsp minced garlic
2 tsp chopped rosemary
2 tsp chopped thyme
½ tsp chopped parsley
¼ c. extra-virgin olive oil, divided
How to make Lamb Chops with Garlic & Herbs
Step 1: Generously season the entire lamb chop with salt and pepper.
Step 2: In a small bowl, combine the garlic, rosemary, thyme, parsley, and 2 tbsp olive oil.
Step 3: On the entire lam chops, rub the paste and allow the chops to marinate at room temperature for at least 30 minutes.
Step 4: In a 12-inch large frying pan, heat 2 tbsp olive oil over medium-high heat. Once the oil is hot, add the lamb chops and sear for about 2 to 3 minutes until the surface is brown.
Step 5: Turn on the other side and continue to cook for about 3 to 4 minutes until the lamb chops internal temperature reads 125 degrees F or 51 degrees C for medium-rare. And for medium, it should be 135 degrees F or 57 degrees C.
Step 6: Before serving, allow the lamb chops for approximately 10 minutes.
Note:
If not planning to cook the lamb chops within an hour of marinating, place them in the fridge to further marinate up to 24 hours.
