This is not gonna be your traditional pound cake, it’s way better! Your classic Southern dessert infused in tropical flavors is a must-have. It’s moist, dense, and has a wonderful tart and sweet flavor. It is drizzled with a tart key lime glaze that makes this pound cake nothing but irresistibly delicious!

2 cups granulated sugar
3/4 cup buttermilk
1/3 cup key lime juice
5 large eggs
3 cups all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
green food coloring (optional)
Key Lime Buttercream Frosting
1/2 cup butter, softened
1 1/2 teaspoons key lime zest
1 teaspoon vanilla extract
1/8 teaspoon salt
2 cups powdered sugar
3 tablespoons key lime juice
1-2 tablespoons milk
HOW TO MAKE KEY LIME POUND CAKE
To make the Cake Layers
Step 1: Prepare the oven. Preheat it to 350 degrees F.
Step 2: Ready a 3 layered cake pans, or a 10-inch tube pan, or 2 loaf pans.
Step 3: Combine the buttermilk and lime juice in a small bowl. Set aside.
Step 4: Meanwhile, cream the butter and sugar until fluffy. Then, add in the eggs one at a time and beat until incorporated.
Step 5: In a separate bowl, combine the flour salt, baking soda, and powder. Mix in the flour and buttermilk mixture to the butter mixture, alternating both on every addition and end with flour. Make sure to not over mix.
Step 6: Add in food coloring, and adjust to desired darkness. Stir until well combined.
Step 7: Pour the batter into the prepared pans. Plae inside the preheated oven and bale for about 30 to 35 minutes, layered or 50 to 60 minutes, if pound. The cake is done when the toothpick inserted in the middle comes out clean.
Step 8: Remove the cake from the oven and let it cool in the pan for 15 minutes. Then, carefully invert onto a cooling rack to cool completely.
For the Frosting
Step 1: Place the softened butter, lime zest, vanilla extract, and salt in a mixing bowl. Beat until creamy.
Step 2: Slowly add the powdered sugar, alternating it with the key lime juice, 1 tablespoon at a time, and 1 tablespoon milk. Beat at a slow speed until well blended and smooth. You can tablespoons of milk to reach your desired consistency.
Step 3: Frost the cake and garnish with key lime and kiwi slices. Enjoy
