These Keto Taquitos are a healthy, fun snack idea. They are also great to serve at parties. Super easy to throw together using just two ingredients! If you have leftover cooked Carnitas meat, I urge you to try this now. It’s incredibly good not to mention the best keto taquitos you’ll ever have! Serve these taquitos with a homemade avocado dip that you can make fast! Simply blend 2 medium avocados with 1/4 cilantro (stems trimmed off), 3 tablespoons sour cream or mayo, 1 tbsp lime juice, half tsp garlic powder, half tsp salt, and 1 jalapeno if desired (seeds removed) in a food processor until smooth and creamy. Make sure to immediately consume the avocado dip because it does not sit well in the fridge.

Leftover fully cooked Carnitas meat about 1/2 to 1 lb.
1 1/2 c. cheese shredded (I used a Colby and Monterrey Jack Cheese)
How to make Keto Taquitos
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Line a large baking sheet with a piece of parchment paper. Make sure to not skip this step to prevent the cheese from sticking to the pan.
Step 3: In each circle, add roughly around 1/4 cup of shredded cheese. On top of the uncooked cheese, add the pre-cooked shredded meat.
Step 4: Place the pan in the preheated oven and bake for about 15 to 20 minutes. Ensure to watch closely while baking to ensure the outsides of the cheese are somewhat brown and bubbly in the centre. Note the cheese will be extra crunchy if it bakes too long or it’ll not properly form a shell if it is under bake.
Step 5: Take the baking sheet from the oven once the cheese is bubbly in the centre and the outside has browned. Using an oven mitt, hold one side of the hot baking tray, and with a spatula, roll the taquitos into shape. Alternately, you can simply fold them to make taco shells. Make sure to roll them while hot, or it’ll be hard for you to shape the taquitos.
