I often crave pizza, but I am afraid of carbs. Not anymore! This Keto Sheet Pan Pizza with Sausage Crust is a lifesaver! It’s a guilt-free pizza, tastes superb, and is so easy to throw together.

Dough:
2 whole large eggs
2 tbsp cream cheese
½ lb sweet Italian sausage, removed from casings
¼ c. coconut flour
1 c. almond flour
¼ c. freshly grated Parmesan cheese
1 ½ c. shredded mozzarella cheese
Toppings:
1 medium onion, sliced
1 tbsp olive oil
1 medium Bell pepper sliced, (any bell pepper, green, red, yellow, or orange)
2 tbsp fresh garlic passed through a garlic press
½ c. pizza sauce (leave out the sugar)
8 oz. baby spinach
2 c. shredded mozzarella cheese
½ c. shredded sharp cheddar cheese
How to make Keto Sheet Pan Pizza with Sausage Crust
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Combine the uncooked sausage meat, cream cheese, almond flour, coconut flour, 1 ½ cups mozzarella cheese, Parmesan cheese, and eggs in a medium bowl.
Step 3: Using kitchen spray, grease a 13 x 9-inch quarter sheet pan. Pour the mixture into the pan and press to even out the edges. To make sure that the crust will firm up, keep the filled pan in the fridge for 30 minutes. You can do this if the mixture is not cold.
Step 4: Place the pan in the preheated oven and bake the mixture for about 12 minutes, turning the pan halfway through baking.
Step 5: In the meantime, heat the olive oil in a medium skillet over medium heat. Once the oil is hot, add the onions and peppers to the skillet. Saute for about 10 minutes or until slightly tender. Add the spinach and continue to cook for a minute more until wilted. Then, add the garlic and take the skillet off the heat.
Step 6: Remove the crust from the oven. On the bottom, spread the pizza sauce, top with the cooked veggies, then sprinkle with cheddar and mozzarella. Return in the oven and resume baking for additional 25 minutes or until browned and melty. Shift under the broiler for about a minute to brown the crust further.
Step 7: Slice into 8 servings and serve. Enjoy!
