I have been on a strict diet for weeks now. Planning a wedding is very stressful, so I gain much weight in the past few days. Counting the days to the big day, I have to put pressure on myself to at least go back to my normal weight. Thank goodness to low carb and keto recipes like this Keto Reuben, I can see that my sacrifices have been paying off. I know, it’s hard to resist temptation, but I learned that I can still enjoy my favourites without feeling guilty.
I enjoy recreating recipes, and I am proud to say that ninety per cent of my experiments are a success. I’ve made other low-carb meals, and I cannot even tell the difference!
Ingredients
2-3 tablespoons butter
1 lb corned beef cut into strips
1 bag of coleslaw mix
Scallions
1 c. Swiss cheese
Russian Dressing:
1 teaspoon hot sauce
4 teaspoons horseradish
1 c. mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
pinch of pepper
1/4 c. sugar-free ketchup
HOW TO MAKE KETO REUBEN IN A BOWL
Step 1: In a skillet, place the butter and melt. Once melted, add the corned beef and cook for about 5 minutes, covered. Remove the cover, then add the coleslaw. Put the lid back on and continue to cook for additional 5 minutes.
Step 2: Give the coleslaw and corned beef a stir, then top with cheese. To let the cheese melt, cover the skillet. Alternately, you can place it in the oven to broil the cheese until bubbly.
Step 3: Before serving, drizzle the Reuben with the dressing and garnish with scallions. Enjoy!
