Keto Gumbo (Slow Cooker, THM:S, Low Carb, Paleo, Ketogenic, Whole30)

A simple and delicious dish that is made with a few simple ingredients, loaded with flavours, and a huge hit every time! A no-fuss Keto Gumbo that you can enjoy whenever. Fast to prepare, just put everything in a slow cooker except for the shrimp. In the last 20 minutes of cooking, add the shrimp, and cauliflower rice, wait for a bit, and you’ll have this on your dinner table in no time! If you’re planning to switch to keto, this here should be on your top list. This hearty soup has so much flavour that you’ll crave over and over.

At first, I was hesitant because I am way out of my league here. But after my first attempt, I just know that I’ll make this again and again.

Ingredients

3 pounds Chicken Thighs, boneless and skinless

1 pound frozen shrimp, deveined, no tails

1 pound Sausage, cut into rounds

1 Bell Pepper, diced

1 Onion, Diced

2 Celery Stalks, diced

4 Tablespoons Garlic in Olive Oil

6 oz Tomato Paste

15 oz Diced Tomatoes

1 Tablespoon Cajun Seasoning

1/2 teaspoon each: Cayenne, Thyme, Oregano, Pepper

1/2 teaspoon Xanthan Gum

1-2 c Chicken Bone Broth

How to make Keto Gumbo

Step 1: In a slow cooker, add all the ingredients (chicken thighs, sausage, bell pepper, diced onion, diced celery stalks, garlic in olive oil, tomato paste, diced tomatoes, Cajun seasoning, cayenne, thyme, oregano, pepper, Xantham Gum, and chicken bone broth) except the shrimps. Stir well.

Step 2: Set on high and cook for 3 to 4 hours or 7 to 8 hours on low.

Step 3: In the last 20 minutes of cooking, add the shrimp.

Step 4: Serve and enjoy!
