A no-fuss recipe, all you need to do is throw everything in your trusty slow cooker minus the shrimp and leave to cook. Twenty minutes before serving, add the shrimp and cauliflower rice. Ingredients
4 tablespoons Garlic in Olive Oil
1 pound Sausage, cut into rounds
3 pounds Chicken Thighs, boneless and skinless)
1 pound frozen shrimp, deveined, no tails
1 Onion, Diced
1 Bell Pepper, diced
2 Celery Stalks, diced
15 oz. Diced Tomatoes
6 oz. Tomato Paste
1 tablespoon Cajun Seasoning
1/2 teaspoon Xanthan Gum
1-2 c. Chicken Bone Broth
1/2 teaspoon each: Cayenne, Thyme, Oregano, Pepper
How to make Keto Gumbo (Slow Cooker, THM:S, Low Carb, Paleo, Ketogenic, Whole30)
Step 1: In your slow cooker, add all the ingredients (garlic in olive oil, sausage. Chicken thighs, onion, bell pepper, celery stalks, diced tomatoes, tomato paste, Cajun seasoning, Xanthan gum, chicken bone broth, and half tsp each of cayenne, thyme, oregano, and pepper) except the shrimp. Stir until well mixed.
Step 2: Put the lid on and set to cook for 3 to 4 hours on high or 7 to 8 hours on low.
Step 3: About twenty minutes before serving, add the shrimp to the slow cooker.
Step 4: Serve right away. Enjoy!
