14 oz. Cauliflower florets, cut into bite-size pieces
32 oz. Chicken breast
1 tsp Onion powder
1 tsp Garlic powder
½ tsp Salt
¼ tsp Pepper
1 tbsp Olive oil
2 c. Keto Alfredo Sauce
12 oz. Shredded mozzarella cheese, divided
HOW TO MAKE KETO CHICKEN ALFREDO CASSEROLE
Step 1: In a microwave-safe bowl with a cup of water, place the cut cauliflower. With a damp paper towel, cover the bowl and steam the cauliflower in the microwave for about 3 to 5 minutes on high until fork tender. Make sure not to overcook them! Remove from the microwave when done and drain. Using a paper towel, pat dries the cauliflower and set it aside.
Step 2: Into 1-inch cubes, slice the chicken breasts, then sprinkle with onion powder, garlic powder, salt, and pepper.
Step 3: Heat the olive oil in a skillet over medium-high heat. Add the chicken cubes to the hot oil and cook for about 10 minutes until they are cooked through. Remove from the heat when done and set the cooked chicken cubes aside.
Step 4: Prepare the oven. Preheat it to 350 degrees F.
Step 5: Heat the keto Alfredo sauce in a small pot over medium heat. Add 3 ounces of mozzarella cheese once the sauce is hot and stir until the cheese has melted and the sauce is smooth.
Step 6: Using a non-stick spray, grease a 13 x 9-inch casserole dish. On the bottom of the dish, spread half of the keto Alfredo sauce. On top, add half of the cauliflower and top with half of the cooked chicken, allowing the chicken cubes to fill in the spaces between. Over the chicken and cauliflower, pour the ¾ cup of keto alfredo sauce, then sprinkle with 4.5 ounces of mozzarella. Do the same layers with the rest of the cauliflower and chicken and topped them off with the rest of the keto alfredo sauce, then mozzarella cheese.
Step 7: Place in the preheated oven and bake for about 30 minutes until the warmed through and the cheese has completely melted.
