This is an amazing low-carb meal with layers of chicken, cheese, and cauliflower. An easy, crazy delicious Keto Chicken Alfredo Casserole that’s perfect for the entire family!

14 oz. Cauliflower florets, cut into bite-size pieces
32 oz. Chicken breast
1 tsp Onion powder
1 tsp Garlic powder
½ tsp Salt
¼ tsp Pepper
1 tbsp Olive oil
2 c. Keto Alfredo Sauce
12 oz. Shredded mozzarella cheese, divided
HOW TO MAKE KETO CHICKEN ALFREDO CASSEROLE
Step 1: In a microwave-safe bowl with a cup of water, place the cut cauliflower. Tent with a damp paper towel and heat in the microwave for about 3 to 5 minutes on high until fork tender. Make sure not to overcook the cauliflower. When done, remove from the microwave and drain. And using a paper towel, pat dries the cauliflower and set aside.
Step 2: Into inch cubes, slice the chicken breasts. Sprinkle the cubed chicken pieces with onion powder, garlic powder, salt, and pepper.
Step 3: Preheat a skillet over medium-high heat. Then, add the olive oil and cubed chicken. Sear for about 10 minutes until the chicken cubes are cooked through. Set aside.
Step 4: Prepare the oven. Preheat it to 350 degrees F.
Step 5: Pour the keto Alfredo sauce into a small pot and heat over medium-low heat. Add 3 ounces of mozzarella cheese to the hot Alfredo sauce and stir until the cheese has melted and the sauce is smooth.
Step 6: Using a nonstick spray, grease a 13 x 9-inch casserole dish. On the bottom of the casserole dish, spread a half cup of the keto Alfredo sauce. Top with a layer of half of the cauliflower followed the cooked chicken, filling the spaces between the cauliflower.
Step 7: Over the cauliflower and chicken, pour ¾ cup of keto alfredo sauce and sprinkle with 4.5 ounces of mozzarella.
Step 8: Do the same layers with the rest of the cauliflower and chicken, topping it off with the remaining keto alfredo sauce, then mozzarella cheese.
Step 9: Bake the casserole in the preheated oven for about 30 minutes or until warmed through and the cheese has completely melted.
