Coarse salt and freshly ground pepper
3 c. elbow macaroni
2 (12-oz.) cans evaporated milk
1/3 c. skim milk
2 large Eggs
1/2 tsp seasoned salt
1/4 tsp garlic powder
2 (8-oz.) packages extra-sharp cheddar cheese, grated
1 (8-oz.) package Monterey Jack cheese, grated
Paprika, for sprinkling
How to make John Legend’s Macaroni and Cheese
Step 1: Prepare the oven. Preheat it to 375 degrees. And grease a 13 x 9-inch glass baking dish generously with butter and set aside.
Step 2: Following the package directions, cook the macaroni in a large pot of salted boiling water until al dente. Drain when done and add back the macaroni to the pot along with butter. Toss until the pasta is coated in melted butter. Set aside.
Step 3: Place the evaporated milk, skim milk, and eggs in a medium bowl. Whisk well before adding in seasoned salt, garlic powder, a tsp salt, and half tsp pepper. Set aside.
Step 4: Mix the cheeses in a different medium bowl and set them aside.
Step 5: Into the bottom of the prepared baking dish, place 1/3 of the macaroni in an even layer and sprinkle with 1/3 of cheese to cover the top. Do this with the rest of the macaroni and cheese mixture, then evenly pour the milk mixture over. Sprinkle with paprika before baking in the preheated oven for about 35 to 45 minutes until lightly browned. Remove from the oven when done, and let the mac and cheese sit for at least 10 to 15 minutes, then serve.
