This easy side dish you can make in under an hour with just some readily available ingredients. A must on Thanksgiving and perfect for everyday meals. You can describe this as a gooey cheese cornbread, or call it cornbread pudding, either way, I’m sure everyone is excited for this!
Even if you are not a fan of cornbread, you’ll still go crazy with this Jiffy Cornbread Casserole. Over the years, so many people already modified cornbread casseroles. My favourite is this one. Cheddar cheese is joined for an added goodness and I simply love it! I think this is better than the original.

Ingredients
1 box Jiffy Corn Muffin Mix
1/2 c. Butter melted
1 can Whole Kernel Corn drained
1 can Cream Style Corn
1 c. Sour Cream
2 eggs
8 ounces Cheddar Cheese shredded
How to make Jiffy Cornbread Casserole
Step 1: Prepare the oven. Preheat it to 375 degrees.
Step 2: Ready a casserole dish. Grease and set aside.
Step 3: Beat the eggs and set them aside.
Step 4: Into the prepared dish, transfer the butter. Add in the corn. You can use either whole kernel or cream style.
Step 5: To the dish, add the eggs followed by the sour cream. Stir well until everything is combined.
Step 6: Stir in half of the cheese.
Step 7: Now, add in the muffin mix and stir until combined.
Step 8: Top the casserole with the rest of the cheese.
Step 9: Place inside the preheated oven and bake for about 50 to 60 minutes until the centre of the casserole is no longer jiggly.
