JAPANESE ZUCCHINI

This is my favourite light lunch! Japanese Zucchini with loads of flavour from the simple ingredients and a sprinkle of sesame seeds for that extra goodness. This dish is so simple, pretty straightforward, refreshing, and delicious! It’s perfect for the coming zucchini season if you want to give this a try soon.

A quick and easy recipe that is easy to modify. I tried to spice things up a bit and it turned out super incredible. I even tried the same recipe to make asparagus and it was a blast! Incredibly fantastic with the same quality if not better than the ones they serve at a restaurant. Serve this a side dish to your favourite main. Or eat it as is like a light salad!

This for me is one of the best zucchini recipes. If you are a vegetarian, I know you’ll enjoy this so much. And if you are not, well this is worth the try. Crazy simple with amazing flavour and a bit of crunch – certainly a must!

INGREDIENTS

3 medium zucchini,

2 tbsp vegetable oil

1 medium sweet onion, coarsely chopped

2 tbsp teriyaki sauce

1 tbsp soy sauce

1/4 to 1/2 tsp crushed red pepper flakes

1/4 tsp black pepper

1 tsp toasted sesame seeds

HOW TO MAKE JAPANESE ZUCCHINI

Step 1: Into 2-inches long pieces, slice the zucchini. Then, into 6 wedges cut each piece.

Step 2: In a large nonstick skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, add the zucchini pieces into the skillet and cook for about 2 minutes.

Step 3: To the zucchini in the skillet, add the teriyaki sauce, soy sauce, red pepper flakes, and black pepper. Continue to cook for another 4 to 5 minutes until soft.

Step 4: Before serving, sprinkle the zucchini with sesame seeds. Enjoy!

NOTE:

If you’d like, you can add a tbsp of butter to the pan at the end for extra richness.
