Italian Sausage Soup With Orzo

This is a great one-pot meal that deserves to be on your favourite weeknight rotation. Super flavorful, crazy delicious Italian Sausage Soup with Orzo that you can throw together in less than thirty minutes! This is my winter favorite soup with tomato-based broth, spicy Italian Sausage, Orzo pasta, and Spinach. Ladle this on bowls and serve with some crusty bread for a filling and satisfying meal perfect for the entire family!

Ingredients

1 tablespoon Olive Oil

500 g. Mild Italian Sausage

1 tablespoon Garlic

1 c. Orzo Pasta

½ onion

2 teaspoons Italian Seasoning

1 28-ounces Crushed Tomato

2 c. Spinach (Tightly Packed)

4 c. Chicken Broth

¼ c. Half and Half

½ c. Parmesan Cheese (to serve)

½ teaspoon red Chili Flakes (optional)

salt and pepper to taste

How to make Italian Sausage Soup With Orzo

Step 1: In a heavy bottom pan, heat the oil. Add the chopped onion and garlic to the hot oil and cook until the onion has softened and the smell of the raw garlic is gone.

Step 2: Into small pieces, roughly break the sausages, then add them to the pan. Continue to cook for an additional 5 to 6 minutes or until the sausages are no longer pink and the garlic is fragrant, stirring often.

Step 3: Pour in the stocks and scrape the bottom of the pot to remove any browned bits. Then, add the tomatoes, Italian seasoning, chilli flakes, salt, and pepper. Stir well.

Step 4: Stir in the Orzo pasta once the stock comes to a boil.

Step 5: Put the lid on and continue to cook for another 8 to 10 minutes over medium-low heat until the Orzo is almost cooked, stirring to keep the Orzo from sticking to the bottom of the pot.

Step 6: Now, add the spinach and cook for 2 minutes more. Then, turn the heat off and stir in half-and-half.

Step 7: To serve, top the Italian Sausage Soup With Orzo with Parmesan cheese. Enjoy!
