Italian Sausage Penne Casserole

PREP TIME: 20 MINS | COOK TIME: 1 HR | TOTAL TIME: 1 HR 20 MINS | SERVINGS: 6 people

This Italian Sausage Penne Casserole is packed with amazing flavor and the best comfort food perfect for everyone. Filled with hot Italian sausage, spices, tomatoes, and pasta. Leftovers are great, too!

INGREDIENTS

1 medium onion, chopped

5 cloves of garlic, chopped

2-pound packages of Hot Italian Sausage can use Sweet Italian instead

24 ounces mozzarella cheese, grated

1 16-ounces box of Penne pasta

1 28-ounces can of diced tomatoes

Salt and pepper, to taste

1 1/2 teaspoons basil

1 1/2 teaspoons oregano

How to make Italian Sausage Penne Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees. Using non-stick spray. Grease a 3-quart casserole dish and set it aside.

Step 2: After removing the sausage from the casing, place the sausage in a large skillet. Crumble the sausage and cook over medium heat. When done, drain the grease, keeping about 2 tbsp of sausage grease in the pan. Set the sausage aside.

Step 3: Add the chopped onions and garlic to the same pan with the reserved sausage grease and saute for a few minutes until the onions are translucent. Add the diced tomatoes along with basil, oregano, salt, and pepper. Continue to cook over medium heat for another 5 minutes.

Step 4: Return the sausage to the skillet. Bring everything to a boil, then adjust the heat to low. Put the lid on and simmer for about 20 to 30 minutes, stirring often.

Step 5: Following the package directions, cook the pasta until al dente. Drain the pasta when done, rinse, and return to the pan.

Step 6: To the pan with the pasta, add the sausage mixture and half of the mozzarella cheese. Toss well until combined, and the cheese has melted.

Step 7: Into the prepared casserole dish, transfer half of the meal and pasta mixture. On top, sprinkle with cheese and add with the remaining meat and pasta. Sprinkle over the rest of the cheese. Tent the casserole dish with foil. Place in the preheated oven and bake for about 30 minutes or until the cheese is bubbly, and heated through. Uncover and bake for a few minutes more.

Step 8: Remove from the oven when done and serve the casserole right away with salad and garlic bread. Enjoy!
