Italian Sausage, Onions and Peppers Skillet

If you are looking for an easy meal to serve on a busy weeknight, then this Italian Sausage, Onions, and Peppers Skillet might be what you need. It’s incredibly flavorful and super impressive, making this also excellent for game day parties!

Ingredients

1 lb fresh Italian sausage links

2 tsp olive oil

½ c. chicken broth (you can use red wine as well if you are not on low-carb and whole30 diets)

1 c. red onion – sliced

1 c. white onion – sliced

1 yellow bell pepper – sliced

1 red bell pepper – sliced

1 orange bell pepper – sliced

3 garlic cloves – sliced

¼ tsp red pepper flakes

1 tbsp chopped parsley

2 tbsp fresh basil

¾ tsp kosher salt

½ tsp black pepper

How to make Italian Sausage, Onions and Peppers Skillet

Step 1: In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add the sausage links to the skillet and cook for approximately 2 minutes on each side or until just browned.

Step 2: When done, transfer the sausage links on a cutting board, then slice them. Set them aside for now.

Step 3: To the skillet, add the onions and saute for about 2 minutes. Add the bell peppers followed by the garlic, salt and black pepper, and red pepper flakes. Continue to cook for additional 5 minutes or until the onions are clear.

Step 4: Pour in the chicken broth and deglaze the pan. To release the brown bits, scrape the bottom of the pan.

Step 5: Place the sausage back to the skillet. Adjust the heat to medium and put the lid on. Let the mixture simmer for about 10 minutes. Remove the cover, then adjust the heat to medium-high and cook for another 3 minutes or until the liquid has just evaporated and the sausage is completely cooked.

Step 6: Serve garnished with parsley and basil. Enjoy!
