This Italian sausage bow tie pasta brings back so many memories. This is the very first dish I cooked for my husband when we moved in together. It is our favourite date night meal served with a simple side salad a bottle of our fave wine.

INGREDIENTS
2 tbsp olive oil
1 lb. mild Italian sausage, casings removed
1 package (12 ounces) bow tie pasta
1/2 c. diced onion
1 can (28 ounces) Italian-style plum tomatoes, drained and coarsely chopped
4 cloves garlic, minced
1-1/2 c. heavy cream
Fresh parsley, minced (optional)
1/2 tsp red pepper flakes (optional)
1 c. packed spinach leaves, cut into thin strips
HOW TO MAKE ITALIAN SAUSAGE BOW TIE PASTA
Step 1: Following the package directions, cook the pasta in a large pot of boiling water. Drain when done.
Step 2: In the meantime, heat the olive oil in a large skillet. Once the oil is hot, add the sausage and red pepper flakes to the skillet and cook over medium-high heat, breaking the sausage into pieces, until completely cooked and browned. Now, add the onion and garlic. Continue to cook until the onion is tender before adding in the tomatoes and heavy cream. Simmer everything for another 10 minutes or until the mixture has thickened.
Step 3: Add the spinach and cook for 3 minutes more. Lastly, add the cooked pasta and toss to coat. If desired, sprinkle with parsley.
NOTES:
For this recipe, you can use your preferred Italian sausage or even use turkey Italian sausage.
If using Italian sausage with casings, just remove the casings and use only the ground meat.
