Italian Chicken Pasta in Creamy White Wine Parmesan Cheese Sauce

Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins | Yield: 4 Servings

If you are in search of a delicious meal to serve for lunch or dinner, then you need to give this recipe a try! Oh, man, you are so in for a treat. Enjoy!

Ingredients:

For cooking the chicken:

4 boneless skinless chicken breasts (halved horizontally and paper towel dried)

1/2 c flour

1 tsp salt

¼ tsp black pepper

1 tsp garlic powder

2 tsp Italian seasoning

2 tbsp olive oil

Pasta:

12 ounces of spaghetti

White Wine Parmesan Sauce:

4 tbsp butter

1 small yellow onion (or use 1/2 onion) chopped

4 garlic cloves minced

2 scallions chopped

2 small tomatoes diced

1 tbsp flour

1 c heavy cream

1 c white wine

½ c Parmesan cheese shredded

1 tsp Italian Seasoning

1/2 tsp salt more to taste

¼ tsp crushed red pepper flakes

Directions:

To Prepare the Chicken Breasts:

Step 1: Slice the chicken breasts into thin cuts, horizontally.

Step 2: Use paper towels to pat dry the chicken slices.

Step 3: In a large mixing bowl, add the flour, garlic powder, Italian seasoning, salt, and pepper. Whisk until well mixed.

Step 4: Coat each chicken generously with the seasonings.

To Cook the Chicken Breasts:

Step 1: Place a large skillet on the stove and turn the heat to medium-high.

Step 2: Add 2 tablespoons of olive oil and allow it to become hot.

Step 3: Add in the seasoned chicken breasts and cook each side for about 4 to 5 minutes or until golden brown.

Step 4: Remove the chicken breasts from the skillet and place them on a clean plate.

To Make the Sauce:

Step 1: In the same pan, add the butter, minced garlic, and sliced onion. Sauté for about 2 minutes or until aromatic and translucent.

Step 2: Add the tomatoes, scallions, and 1 tablespoon of flour. Whisk until well mixed.

Step 3: Add the Italian seasoning, heavy cream, wine, red pepper flakes, and salt. Stir until well mixed and bring the mixture to a simmer.

Step 4: Add ½ cup of shredded Parmesan cheese and stir until well combined.

To Cook the Pasta:

Step 1: Refer to the directions provided on the package of the pasta on how to cook it.

Step 2: Drain and rinse the pasta with cold water to stop the cooking process.

To Assemble:

Step 1: Put the Al dente pasta into the skillet with the sauce. Stir until well mixed.

Step 2: Reduce the heat to low and simmer for about 2 minutes. Add more salt and pepper if needed.

Step 3: Put the cooked chicken breasts over the pasta.

Step 4: Remove from the heat.

Step 5: Serve and enjoy!
