2 tablespoons butter
2 pounds boneless, skinless chicken breasts, cut into 1/2” cubes
2 cloves garlic, minced
1 small onion chopped
1/4 c. red bell peppers, diced
1 c. milk or half and half
4 ounces cream cheese, cubed
1/2 c. chicken stock
1 envelope dry Italian dressing mix
10.75 ounces can cream of chicken soup
8 ounces uncooked bow tie, farfalle pasta -OR- your choice of shape pasta
3 tablespoons grated Parmesan cheese divided
How to make Italian Chicken Casserole
Step 1: Cook the pasta about 2 to 3 minutes shy of the cooking time directed on the package instruction (do this if you are making the casserole version). Or cook the pasta following the package direction if not planning to bake in the oven. When done, drain the pasta and set it aside.
Step 2: In a large skillet, melt the butter over medium heat. Once the butter has melted, add the chicken cubes to the skillet and cook until brown. Then, add the onion, garlic, and bell peppers. Cook for another 3 minutes or until the onion is translucent.
Step 3: Pour the soup into the pan and add the milk and stock. Stir well until smooth.
Step 4: Stir in the cubed cream cheese until melted and incorporated.
Step 5: To the pan, add 2 tbsp of the Parmesan cheese and dressing mix. Stir well until combined.
Step 6: Then, add the cooked pasta and toss to coat. Cook further until heated through. You can serve right away. Enjoy!
CASSEROLE:
Step 7: If baking, start preheating the oven to 350 degrees F. Lightly grease a 2-quart casserole. You can use 11 x 7 or 9 x 9-inch rounds, square, or oblong casserole.
Step 8: Into the prepared pan, pour the chicken and pasta mixture, then sprinkle with the rest of the 2 tbsp Parmesan cheese.
Step 9: Place in the preheated oven and bake for about 30 to 40 minutes or until the sauce is bubbling and the top of the pasta is starting to get golden brown.
Note:
For this recipe, you can use leftover chicken. If so, the browning step is not required.
