Italian Almond Cookies

Prep Time: 10 mins | Cook Time: 6 mins | Chilling time: 1 hr | Total Time: 16 mins | Servings: 49 cookies

This cookie recipe is super fun and easy to make! You can whip this up using only six ingredients, and you can make a bunch if you want to! Feel free to play around with different shapes using your preferred cookie cutter.

Ingredients

1 egg yolk

1 c. all-purpose flour

1/2 tsp vanilla

1/4 c. granulated sugar

1/2 c. + 1 tbsp almond flour

1/3 c. + 1 1/2 tbsp butter (softened)

*For this recipe, you can use either salted or unsalted butter. If using unsalted, add 1/4 tsp salt.

*You can swap vanilla with almond flavouring or use both.

How to make Italian Almond Cookies

Step 1: Place the flour and sugar in a large bowl. Mix well, then create a well in the centre. Add the egg yolk, butter, and vanilla in the middle of the well and stir well using a fork until almost mixed. Or you can make the dough in a food processor.

Step 2: Knead the dough on a lightly floured flat surface into a compact ball, then wrap it with plastic and keep it in the fridge for about an hour.

Step 3: Prepare the oven. Preheat it to 350 degrees F or 180 degrees C. Using parchment paper, line cookie sheets.

Step 4: After an hour, take the dough from the fridge and place it on a lightly floured surface. Roll the dough into a 1/4-inch or 1/2cm thick rectangle. Then, cut out the cookies using your favourite cookie cutter.

Step 5: On the prepared cookie sheet, place the cookies. Place in the preheated oven and bake the cookies for about 6 minutes (if baking mini cookies) or about 8 to 10 minutes for larger cookies. Make sure to not let the cookies brown.

Step 6: Remove from the oven when done and allow the cookies to cool on the cookie sheet before dusting with powdered/icing sugar. Enjoy!

Note:

You can add a bit of extra tbsp softened butter if the dough turned out too crumbly.
