INGREDIENTS

2 tbsp olive oil

1 1/2 pounds (0.6 kg) bone-in pork chops, at least 1” thick

salt

1/8 tsp cayenne pepper

2/3 c. chicken broth

4 cloves garlic, peeled

2/3 c. heavy whipping cream

ground black pepper

1/4 tsp salt or to taste

1 tbsp chopped Italian parsley leaves

1/3 c. shredded Parmesan cheese, plus more for garnishing

HOW TO MAKE INSTANT POT PORK CHOPS

Step 1: Sprinkle the pork chops with salt and ground black pepper.

Step 2: Set your Instant Pot to “Saute” mode. Drizzle with olive oil once the pot has fully heated. Add the pork chops and par sear them until both sides are slightly brown. You can also do this on a regular skillet or non-stick skillet.

Step 3: To the pot, add the garlic and chicken broth. Over the pork chops, sprinkle the cayenne pepper. Put the lid on and set the pot to “Manual” on high pressure for 8 minutes.

Step 4: Once the time is up, do a Quick Release. Carefully remove the cover once the valve drops.

Step 5: To the pork chops, add the heavy whipping cream along with salt and shredded Parmesan cheese. Mix well, then set the pot to “Saute” for about 2 to 3 minutes until the sauce has thickened.

Step 6: Serve the pork chops right away topped with parsley and shredded Parmesan cheese. Enjoy!

NOTE:

To make this in a slow cooker. First, pan-fry the pork chops on a skillet and transfer them to the slow cooker and cook for 4 hours.
