Ingredients
2 chicken breasts boneless, skinless, bite-size pieces, can double the recipe if you want 4 breasts
2 cups barbecue sauce (do not use honey style as there is too much sugar and may display burn message)
3 tablespoons soy sauce
1 tablespoon cornstarch at end to thicken the sauce when chicken is done
1/4 cup orange Marmelade
1/2 onion cut into large pieces – optional
chives or green onion to garnish
1/4 cup water or chicken broth
How to make Instant Pot Orange Chicken
Step 1: Add the cubed chicken to the Instant Pot along with the bbq sauce, water or chicken broth, onion (if desired), and soy sauce. Stir to coat well the pieces of the chicken.
Step 2: Set to high pressure and the timer to 4 minutes. Cover the pot with the lid and seal. Do a quick release once the timer beeps and very carefully lift the lid. Then, set the IP to “Saute”.
Step 3: In a small bowl, add the cornstarch with a little of the hot bbq sauce from the pot. Whisk until smooth and stir into the pot. Add in the Marmelade, stir, and let the mixture simmer for approximately 2 minutes, then stir again. Turn the IP off when done.
Step 4: Serve the Orange Chicken over rice. Enjoy!
