Instant Pot Italian Sausage Pasta

PREP TIME: 30 MINS | COOK TIME: 6 MINS

This is one of my favourite pasta dishes with amazing flavours from sausage, mixed with green peppers, mozzarella cheese, and seasonings. The stringy cheese is a total eye-catcher! A winner pasta dish that you can easily make in an Instant Pot in under an hour!

INGREDIENTS

1/4 c. butter, divided

1 pound Hot Italian sausage

1 pound box Rigatoni

1 onion, chopped

2 green bell peppers, sliced

3 cloves garlic, minced

1 teaspoon oregano

1 teaspoon basil

6 ounces can tomato paste

15 ounces can tomato sauce

14.25 ounces can diced tomatoes

2 c. water

2 c. vegetable broth

10 ounces can Rotel

4 c. Mozzarella, shredded

1 teaspoon pepper

How to make Instant Pot Italian Sausage Pasta

Step 1: To the bottom of the pot, add half of the butter and Italian sausage links. Set to “Saute” until all sides of the sausage are browned. Take the sausage from the pot when done, then slice it into half-inch slices. Return to the pot.

Step 2: To the pot, add the rest of the butter. To remove any browned bits, scrape the bottom of the pot. Add the sliced bell pepper along with the onions and garlic. Set the IP to “Saute” for about 3 to 4 minutes until the bell peppers have softened.

Step 3: Then, add the oregano, basil, and pepper. Mix well, then ad the rest of the ingredients except for the cheese. Stir well.

Step 4: Put the lid on, lock, and turn the vent to “sealing”. Set to “Manual High Pressure” and cook for about 6 minutes.

Step 5: Do a natural release of pressure for 5 minutes, then a quick release. Uncover, then stir in the shredded cheese.

Step 6: Serve the Italian Sausage Pasta with a side salad and garlic bread. Enjoy!
