INSTANT POT HONEY GARLIC CHICKEN

PREP TIME: 10 MINS | COOK TIME: 20 MINS | TOTAL TIME: 30 MINS | SERVES: 6

This chicken dish is bursting with an amazing honey-garlic flavour that is to die for! It is another Instant Pot recipe that requires just a few simple ingredients, and you can throw it together in a breeze! This Chinese-style tender chunks of chicken cooked in a simple honey garlic sauce perfect to pair with rice and your favourite steamed veggies on the side for a quick and filling meal excellent for the entire family! You can even use the same sauce for meatballs, shrimp, carrots, and more!

Ingredients

2 tbsp vegetable oil

3-4 boneless, skinless chicken breasts

1/3 c. onion, diced

1/2 c. honey

1/3 c. soy sauce

1/4 c. ketchup

4 garlic cloves, minced

3 tsp cornstarch dissolved in 1/4 c. water

Salt and pepper to taste

Rice for serving

Sesame seeds & green onion for topping

HOW TO MAKE INSTANT POT HONEY GARLIC CHICKEN

Step 1: In the bottom of an Instant Pot, place the chicken and sprinkle with salt and pepper.

Step 2: Place the honey, soy sauce, onion, ketchup, oil, and garlic in a small bowl. Mix well until combined, then pour this over the chicken. Put the lid on and seal. Set to cook the chicken on meat setting for about 15 minutes (or for non-IP to high pressure). After the time beeps, do a quick release. Take the chicken out of the pot, leaving the sauce in the pot.

Step 3: In a small bowl, whisk 3 tbsp cornstarch with 1/4 cup water until dissolved. Pour this into the pot and stir well to incorporate. Press the saute button and cook the sauce for approximately 5 minutes or until it has slightly thickened.

Step 4: Into bite-sized pieces, cut the chicken and place them back in the pot. Toss the chicken pieces with the sauce. Serve the honey garlic chicken garnished with some sesame seeds and green onions. Enjoy over rice.
