INSTANT POT HONEY GARLIC CHICKEN

PREP TIME: 10 MINS | COOK TIME: 20 MINS | TOTAL TIME: 30 MINS | SERVES: 6

Juicy, tender pieces of chicken smothered in bursting with flavour honey-garlic sauce. Incredibly easy and fast to make using only simple ingredients. Enjoy this over rice for a quick and satisfying meal perfect for busy days.

This Chinese-style dish is one to keep. Say no to take-out and enjoy this scrumptious dish without leaving your house. And the best part of this recipe is you can pair the sauce with just about anything. I use it for meatballs, noodles, and shrimp, even for stir-frying vegetables. You can never go wrong with this simple yet delicious dish!

Ingredients

3-4 boneless, skinless chicken breasts

Salt and pepper to taste

1/2 c. honey

1/3 c. soy sauce

1/3 c. onion, diced

1/4 c. ketchup

2 tbsp vegetable oil

4 garlic cloves, minced

3 tsp cornstarch dissolved in 1/4 c. water

Sesame seeds & green onion for topping

Rice for serving

HOW TO MAKE INSTANT POT HONEY GARLIC CHICKEN

Step 1: Into the bottom of the Instant Pot, place the chicken and season with salt and pepper.

Step 2: Place the honey, soy sauce, onion, ketchup, oil, and garlic in a small bowl. Whisk well to combine, then pour this over the chicken. Cover and seal the lid. Set the IP to Meat setting for 15 minutes or High pressure if using a non-IP. Once the time is up, do a quick release of pressure. Take the chicken from the pot, leaving the sauce behind.

Step 3: In a small bowl, dissolve 3 tbsp cornstarch with 1/4 cup water. Stir this into the sauce until incorporated. Set the IP to Saute and set to 5 minutes until slightly thickened.

Step 4: Into bite-size pieces, slice the chicken and add them back to the pot. Toss with the sauce before serving and garnish with some sesame seeds and green onions. Serve over rice. Enjoy!
