1 tbsp Vegetable oil
1 tbsp butter
1 medium sweet or yellow onion, diced
1 green bell pepper, diced
6 white mushrooms, sliced
1 (14-oz.) package smoked sausage, sliced
3 garlic cloves, minced
1 boneless, skinless chicken breast cut into bite-sized pieces
1 tsp smoked paprika
1 tsp Italian seasoning
2 1/2 c. chicken broth
1 (14-oz.) can petite diced tomatoes, undrained
1 tbsp Cajun or Creole seasoning (I use Tony Chachere’s)
1/4 tsp cayenne pepper
12 oz. uncooked penne pasta
4 oz. cream cheese softened and cut into pieces
1 c. freshly grated or shredded Parmesan cheese
1/2 c. heavy cream
1 tbsp chopped fresh parsley
HOW TO MAKE INSTANT POT CREAMY CAJUN PASTA
Step 1: Set the Instant Pot to “Saute” mode. Then, add the oil and butter. Cook the onion and green pepper in the hot oil and butter for about 2 to 3 minutes until they started to get soft. Add the mushrooms, sausage, and garlic and continue to cook for 2 to 3 minutes more.
Step 2: To the IP, add the chicken along with paprika, Italian seasoning, chicken broth, tomatoes, Cajun seasoning, and cayenne pepper. Then, add the pasta and push everything down into the liquid using a wooden spoon.
Step 3: Cover with the lid, making sure the valve is set to a “sealing” position. Press to cancel the “Saute” mode and set to Pressure Cook on High for 5 minutes.
Step 4: After 5 minutes, release the pressure manually, then remove the lid and stir in the cream cheese, Parmesan cheese, and heavy cream until the cheese is melted.
Step 5: Before serving, sprinkle the parsley on top. Enjoy!
