I am crazy over this chicken recipe. Simple, easy to prep, and insanely delicious whole chicken roasted in the oven with vegetables and lots of gravy. If you have no luck making roast chicken before, all that will change with this marvellous Ina Garten’s Roast Chicken.

5-6 lb. whole chicken
Salt/Pepper
1 large bunch of thyme, plus 20 sprigs
1 head garlic, cut in half crosswise
1 lemon, halved
2 tbsp butter, melted
1 large yellow onion, sliced into large chunks
4 whole carrots, sliced into 4-inch chunks
1 bulb of fennel, tops removed, cut into wedges
2-3 tbsp Olive oil
Gravy:
2/3 c Chicken Broth
3 tbsp Butter
3 tbsp Flour
How to make Ina Garten’s Roast Chicken
Roast the Chicken:
Step 1: Use paper towels to pat dry the prepared chicken.
Step 2: Prepare the oven and preheat to 220 degrees C or 425 degrees F.
Step 3: Season with salt and pepper the whole chicken.
Step 4: Stuff it with lemon, garlic, and thyme.
Step 5: Brush with melted butter the outer part of the chicken, then sprinkle more salt and pepper.
Step 6: Tie the legs of the chicken with kitchen twine, then tuck the wings.
Step 7: Add the carrots, onion slices, fennel bulb, and carrots onto a roasting pan.
Step 8: Season the veggies with olive oil, thyme, salt, and pepper. Toss until well coated.
Step 9: Add the chicken over the veggies.
Step 10: Place it inside the preheated oven and roast for 1 hour and 30 minutes. Make sure to spoon the delicious drippings over the chicken about 30 minutes before the cooking time ends.
Step 11: Remove from the oven and all the chicken to sit at room temperature for at least 20 minutes.
Step 12: Slice into smaller cuts.
Step 13: Serve with the delicious roasted veggies. Enjoy!
Gravy:
Step 1: Add the chicken drippings into a mixing bowl as well as the chicken broth.
Step 2: Place a saucepan on the stove and turn the heat to medium.
Step 3: Add butter and let it melt.
Step 4: Add about 3 tbsp of flour and whisk until slightly brown for a minute.
Step 5: Add the broth mixture and whisk until well blended.
Step 6: Cook for a few minutes until the texture becomes thick.
Step 7: Sprinkle salt and pepper to taste. Enjoy!
