Impossible Pie

This pie made history! An impossible pie that makes it crust along with two delicious layers while baking. A vintage pie that has been around for ages!

Time passed like a hurricane. It is never slow, and before we know it, another day has passed. But with time, there are things we cannot change and remain history. This beautiful pie has been tested by time. I first tasted it years ago when we visited my grandparents. My Nana made the best pie, and this Impossible pie is one of her favourites. It’s incredibly easy to make using only pantry ingredients. It’s flavoured with coconut with an amazing coconut texture. I did not get it at first, why they call it the impossible pie. But when it came out of the oven, I was surprised how three layers formed magically! With straightforward steps – mix, then dumped in a pie plate, and bake, you’ll be surprised with the superb result!

You’ll love this creamy and smooth pie with crunchy layers of coconut toppings. Almost like our beloved Coconut Pie with history!

Ingredients

1/2 c. butter, softened

1/2 c. flour

1 c. sugar

2 teaspoons vanilla extract

4 Eggs

2 c. milk

1 c. shredded coconut

How to Make Impossible Pie

Step 1: Prepare the oven. Preheat it to 350 degrees F.

Step 2: In a large bowl, add the softened butter, flour, sugar, vanilla extract, eggs, milk, and shredded coconut. Beat all the ingredients until well combined.

Step 3: Into a 9-inch greased pie pan, pour the batter. Place in the preheated oven and bake for about an hour until golden and the middle of the pie is firm.

Step 4: Remove the pie from the oven when done and onto a cooling rack to cool. Then, store in the fridge until ready to serve. Give the pie a chance to firm, so I suggest letting it sit for a couple of hours.
