How to Cook a Perfect Turkey

Step 1: Place the turkey in the fridge to thaw, defrosting for 24 hours for every 5 lbs of turkey.

Step 2: Brine the turkey for at least 8 hours for best results or more if time permits. Brining will make an ideally moist, superbly seasoned, and has equally tender, and flavorful dark and white meat.

Step 3: On a roasting pan rack, place the turkey. Gently lift the skin from the meat. Pry the skin if you must begin at the back to the neck. In the area, you just made, apply the herb butter and rub gently on the entire turkey. Then, rub the outside with your buttery hands. If not enough butter rub left, use canola oil instead.

Step 4: To flavour the turkey from the inside fill the cavity with steeped herby aromatics. This too will slightly sweeten the savoury meat.

Step 5: Roast the turkey for about 30 minutes at 500 degrees F.

Step 6: Make a foil hat for the breasts and adjust the oven to 350 degrees.

Step 7: Cook the turkey to 161 degrees F for about 13 minutes for each pound. Normally a 14 to 16 lbs turkey takes about 2.5 hours to cook.

Step 8: Once done, remove the turkey from the oven and cover with foil. Allow the turkey to rest for at least 30 minutes before serving.

Notes:

Feel free to adjust the herb and brine you use to your liking.

The resting time of 30 minutes after removing the turkey from the oven will continue to cook the turkey to reach 165 degrees.

This recipe serves 14 people for a 14 lbs turkey.
