2 1/2 lbs chicken thighs organic skin & boneless
3 tbsp olive oil
1/2 tsp ginger chopped
5 tbsp raw honey
3 tbsp soy sauce
4 cloves of garlic minced
salt and pepper to taste
fresh parsley chopped for garnish
How to make Honey Soy Chicken Thighs
Step 1: Combine the olive oil, ginger, honey, soy sauce, garlic, salt, and pepper in a mixing bowl.
Step 2: Wash the chicken and trim off all the fat. Transfer the chicken to the bowl with the marinade.
Step 3: Prepare the oven. Preheat it to 400 degrees F.
Step 4: Let the chicken marinate for at least an hour. Then, transfer the chicken thighs along with the marinade in a cast-iron or baking dish. Place inside the preheated oven and bake for about 35 to 40 minutes or until the chicken is cooked through, turning the chicken a couple of times to make sure that they will be juicy and tender without a dry top.
Step 5: Turn the chicken on the other side, then broil for about 5 minutes on high until the chicken thighs have a gorgeous roasted colour.
Step 6: Serve with rice or mashed potato, pour the sauce over, and garnish with chopped parsley. Enjoy!
