6 garlic cloves, pressed or grated
1 (1”) piece fresh ginger, grated
2 tbsp olive oil or vegetable oil
3 tbsp soy sauce
4 tablespoons honey
1/4 tsp ground black pepper
4 lbs chicken drumsticks (about 12 drumsticks)
1 scallion thinly sliced for garnish (optional)
How to make Honey Soy Baked Chicken Drumsticks
Step 1: Mix the garlic, ginger, oil, soy sauce, honey, and ground black pepper in a large zip-top bag. Ensure that the honey blends well with the other ingredients by massaging the bottom of the bag. Add the chicken drumsticks into the bag, seal, and shake to coat the chicken with the marinade. You can massage the chicken a bit so the marinade will penetrate the pieces of the chicken. Let the chicken marinate for at least 30 minutes or overnight.
Step 2: Prepare the oven. Preheat it to 375 degrees F.
Step 3: On a baking pan or rimmed baking sheet, place the chicken in one layer. If you’d like you can also pour the leftover marinade on the baking pan.
Step 4: Place in the preheated oven and bake for about 45 to 50 minutes until completely cooked.
Tips:
The chicken is done when the internal temperature reached 165 degrees.
You can swap the fresh ginger with half to a tsp ground ginger.
Make sure to check the chicken as it cooks. If you notice that the marinade is drying up, add in around 1/4 cup of chicken broth.
Marinate the chicken for at least 30 minutes but of marinating longer or overnight, ensure to keep it in the fridge. About 20 to 30 minutes before baking, remove the chicken from the fridge and allow them to come to room temperature.
