HONEY GARLIC BUTTER SHRIMP & BROCCOLI

Marinade: 30 mins | Prep time: 10 mins | Cook time: 5 mins | Total Time: 45 mins | Yield: 4

Shrimp and broccoli in a delicious sticky sauce. My favourite weeknight meal – so easy, one of the quickest dishes to throw together, and comes out beautifully. A guaranteed hit, perfect for the family, and for entertaining.

INGREDIENTS

1/2 c. honey

1/4 c. soy sauce

1 tsp fresh grated ginger

2 tbsp minced garlic

1/4 tsp red pepper flakes

1/2 tsp cornstarch

1 lb large shrimp, peeled, deveined and tails removed if desired

2 tbsp butter

2 c. chopped broccoli

1 tsp olive oil

salt pepper

HOW TO MAKE HONEY GARLIC BUTTER SHRIMP & BROCCOLI

Step 1: Add the honey, soy sauce, ginger, garlic, red pepper to a small bowl and mix well.

Step 2: Into a bowl, place the peeled and deveined shrimp. Add in 1/3 of the sauce and toss. Marinate the shrimp for at least 30 minutes.

Step 3: To the reserved marinade, whisk in the cornstarch. Set aside.

Step 4: Over high heat, heat a skillet or wok. Once hot, add the olive oil and broccoli to the skillet and season with salt and pepper. Cook the broccoli for about 5 to 6 minutes until just tender. Take the broccoli out of the pan and set it aside.

Step 5: To the skillet, add the butter. Once melted, add the shrimp but discard the marinade. Cook the shrimp for about 2 minutes per side until the shrimp is pink.

Step 6: Pour in the reserved sauce to the shrimp and let it simmer. Add in the broccoli and toss until heated through.

Step 7: Serve the Honey Garlic Butter Shrimp and Broccoli with white rice or pasta. If desired, garnish with green onions. Enjoy!

NOTE:

If desired, you can leave the shrimp tails on like I did as it adds extra flavour to the dish and the shrimp looks prettier that way. Or remove the tails if that is what you want.
