Ingredients
3.5 c. all-purpose flour
1.5 c. warm water
1 packet dry active yeast
2 tablespoons sugar
1/3 c. baking soda

HOW TO MAKE HOMEMADE SOFT PRETZEL BITES
Step 1: To warm water, add the yeast and allow it to sit for about 5 minutes. Then, add in the sugar and stir.
Step 2: Into a large mixing bowl, add the flour. In the centre, make a well, then pour the yeast mixture on it. Mix using a rubber spatula or your hands until well combined. Then, with your hands or using a KitchenAid mixer with a dough hook, knead the dough until you make a ball.
Step 3: Transfer the dough to a floured surface. Into 6 pieces, divide the dough and roll each into an inch rope, then cut the ropes into an inch bite-sized pieces.
Step 4: Slowly add the baking soda to a pot of boiling water, then decrease to a simmer. In the water, place the pretzel bites for only 30 seconds and flip halfway through. On a plate covered in a paper towel, transfer the pretzels and sprinkle with plenty of salt.
Step 5: Using a cooking spray, grease a fryer rack. Bake for about 5 minutes at 390 degrees. Alternately, you can also bake the pretzel bites for about 5 to 8 minutes at 425 degrees oven. Make sure to line the baking sheet with parchment paper.

Very slowly add the baking soda to the water.
You can store the dough in the fridge before the baking soda bath step for up to 3 days.
