4 tablespoons butter
4 tablespoons flour
3 cups milk
salt and pepper
1 tablespoon butter (for sauteed onions)
3 medium onions (thinly sliced)
8 medium peeled and thinly sliced Russett potatoes
24 ounces sliced ham (2 ham steaks cubed)
4 cups freshly grated mild cheddar
How to make Homemade Ham and Scalloped Potatoes
Step 1: Prepare the oven. Preheat it to 350 degrees. And grease a 9 x 13-inch baking dish with butter.
Step 2: melt 2 tbsp butter in a saucepan over medium-high heat. Once the butter has melted, stir in the flour and cook for about a minute. Take the pan off the heat, then whisk in the milk. Put the pan back to heat and bring the mixture to a simmer, stirring. Remove from the heat once the sauce has thickened and season with salt and pepper. Set aside.
Step 3: In a skillet with melted butter, cook the onions until golden brown. To taste, season with salt and pepper.
Step 4: In the bottom of the prepared baking dish, spread 1/3 of the white sauce and top with half of the potatoes, then half of the onions, ham, cheese, and another third of the sauce. To taste, season with salt and pepper. Repeat the layers ending with the rest of the cheese. Place in the preheated oven and bake for about 45 minutes until golden and bubbly. Remove from the oven when done and let the ham and scalloped potatoes sit for at least 10 to 15 minutes before serving. The sauce will thicken further.
Note:
I highly recommend using freshly grated cheese like most of the pre-shredded cheese has an added wax-like film disrupting proper melting.
